White Chicken Enchiladas

White Chicken Enchilidas


1 lb. of chicken breast cooked and cut into small pieces

Then add:

1 pkg. of light cream cheese

1 small can diced green chilies

sliced olives

Let that melt together then put a small helping into whole wheat tortillas (makes about 6-7). Place in a sprayed pan and top with 1 Large can of Green Enchilada sauce. Then spread shredded cheese over the top.

Cook on 375 for about 25 minutes until cheese is melted and sauce starts boiling!


This dish requires very few ingredients and taste great. I used fat-free cream cheese and it still was delicious. I also cooked the chicken with the green chillies in the crock pot, then added the cream cheese in the end. Perfect dish to serve with Spanish Rice, refried or black beans, and corn.
