Healthy Warm Apple Crisp

2 cups peeled, cored and thinly sliced apples, such as Granny Smiths

2 tbsp sugar, or to taste (I just put a little brown sugar with the apples instead)

1/4 cup apple juice

1 tbsp fresh lemon juice

2 tsp cornstarch

1 tsp ground cinnamon

pinch of nutmeg

oat topping ingredients:

1/2 cup walnuts or almonds, finely chopped (Roasted/Salted Almonds were delicious)

1/2 cup old-fashioned rolled oats

1/2 cup brown sugar

2 tbsp all-purpose flour

2 tbsp softened unsalted butter

Preheat the oven to 350. Coat an 8-inch square shallow baking dish with cooking spray. In a large bowl, toss together the apples, sugar, apple juice, lemon juice, cornstarch, cinnamon, and nutmeg until well combined. Set aside.

Make the oatmeal topping: In the bowl of an electric mixer fitted with a paddle, gently combine the walnuts or almonds, oats, brown sugar, flour, and butter at low speed.

Place the apple mixture in the dish. Sprinkle the topping evenly over the apples and bake for 25 to 30 minutes, until the apples are cooked through, the juices are bubbling, and the topping is browned. Serve, hot, warm, or at room temperature.

Very tasty and a little more healthy than the usual apple cobbler =)

Cauliflower Cheese Casserole

1 head cauliflower - cook until tender
8oz cream cheese - puree in blender
Add 1/2 cup cream (can use sour cream)
Add cauliflower to mix and blend
Add 2 tbsp butter (can skip)
Add salt & pepper
Put in 8"square baking dish and cover with grated cheese.
Bake @350 degrees until bubbling

Baked Sweet Potato Sticks

"Best eaten at room temperature."
INGREDIENTS:
1 tablespoon olive oil
1/2 teaspoon paprika
8 sweet potatoes, sliced lengthwise into
quarters
DIRECTIONS:
1.Preheat oven to 400 degrees F (200 degrees C). Lightly grease a baking sheet.
2.In a large bowl, mix olive oil and paprika. Add potato sticks, and stir by hand to coat. Place on the prepared baking sheet.
3.Bake 40 minutes in the preheated oven.


This is a great side dish to go with burgers! They are not crispy but very flavorful.

INGREDIENTS:
1 pound ground turkey
1 tablespoon garlic powder
1 tablespoon red pepper flakes
1 teaspoon dried minced onion (optional)
1 egg
1/2 cup crushed cheese flavored
crackers
DIRECTIONS:
1.Preheat a grill for high heat.
2.In a large bowl, mix together the ground turkey, garlic powder, red pepper flakes, minced onion, egg and crackers using your hands. Form into four fat patties.
3.Place patties on the grill, and cook for about 5 minutes per side, until well done.


My Friend Ashley Caputa introduced these delicious burgers to us last night! They are very moist and flavorful. A great substitute for ground beef.
