Healthy Warm Apple Crisp

2 cups peeled, cored and thinly sliced apples, such as Granny Smiths

2 tbsp sugar, or to taste (I just put a little brown sugar with the apples instead)

1/4 cup apple juice

1 tbsp fresh lemon juice

2 tsp cornstarch

1 tsp ground cinnamon

pinch of nutmeg

oat topping ingredients:

1/2 cup walnuts or almonds, finely chopped (Roasted/Salted Almonds were delicious)

1/2 cup old-fashioned rolled oats

1/2 cup brown sugar

2 tbsp all-purpose flour

2 tbsp softened unsalted butter

Preheat the oven to 350. Coat an 8-inch square shallow baking dish with cooking spray. In a large bowl, toss together the apples, sugar, apple juice, lemon juice, cornstarch, cinnamon, and nutmeg until well combined. Set aside.

Make the oatmeal topping: In the bowl of an electric mixer fitted with a paddle, gently combine the walnuts or almonds, oats, brown sugar, flour, and butter at low speed.

Place the apple mixture in the dish. Sprinkle the topping evenly over the apples and bake for 25 to 30 minutes, until the apples are cooked through, the juices are bubbling, and the topping is browned. Serve, hot, warm, or at room temperature.

Very tasty and a little more healthy than the usual apple cobbler =)

Chocolate Volcano Cakes

Serves 6
Nutrition per cake:
Calorie 298, Total Fat 19g, Sodium 116 mg, Sugars 22g

Ingredients:
Cocoa powder, for muffin tins
21/2 Tablespoons unsalted butter, at room temperature
1/3 cup granulated sugar
2 large eggs
1 egg white
1/3 cup all-purpose flour
1/4 teaspoon salt
6 ounces bittersweet chocolate, melted (= 1 cup chocolate chips) Melt the chocolate in the microwave, checking after 30-second intervals. Mix after each check as chips keep their shape even when melted.
1/4 cup heavy cream, for serving
Confectioners' sugar, for serving

1. Preheat the oven to 400F

2. Spray 6 cups of a standard muffin tin with cooking spray. Dust with cocoa powder and tap out the excess. Place on a baking sheet.

3. Using a standing mixer fitted with the paddle attachment or with the beaters of an electric hand mixer, cream the butter and granulated sugar until fluffy, about 1 minute.

4. Add the eggs and egg white one at a time, beating well after each addition.

5. Lower the speed to low and mix in the four and salt until just combined. Add the chocolate and mix, again, until just combined. Divide the batter evenly among the prepared muffin cups.

6. Bake just until the tops of the cakes no longer jiggle when the pan is lightly shake, 8 to 10 minutes. Remove from the oven, place on a cooking rack, and let rest for 5 minutes.

7. Meanwhile, using a whisk or electric mixer, whip the cream.

8. With the help of a small offset spatula or spoon, invert the cakes onto serving plates; the bottom will now become the top. Don't worry if they crack slightly. Just dust with confectioners' sugar and serve with a dollop of whipped cream.

This dessert is super rich and delicious. It is very quick and easy to put together and does not require too many ingredients. I haven't made it with the whipped cream on top but think a little ice cream would be perfect with the lava cakes.

Apple cobbler with cinnamon and vanilla, along with a cake-like batter topping


Ingredients:

Apple Filling:

5 cups tart apples, peeled, sliced

3/4 cup sugar

2 tablespoons flour

1/2 teaspoon cinnamon

1/4 teaspoon salt

1 teaspoon vanilla extract

1/4 cup water

1 tablespoon butter, softened

Topping:

1/2 cup flour, sifted

1/2 cup sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

2 tablespoons butter, softened

1 egg, slightly beaten

Preparation:

In a medium bowl, combine apples, 3/4 cup sugar, 2 tablespoons flour, cinnamon, 1/4 teaspoon salt, vanilla and water. Turn into a lightly buttered 9-inch square pan. Dot apples with 1 tablespoon butter.

Combine all topping ingredients. Beat with wooden spoon until batter is smooth. Drop batter in 9 portions, over the apples, spacing evenly. Batter will spread during baking. Bake 35 to 40 minutes at 375° or until apples are tender and crust is golden brown. Serve warm with cream or ice cream.
Serves 6 to 8.



This cobbler had a wonderful taste. I uses granny smith apples. I thought the filling turned out great but the topping could have been better. I would like to try a recipe that has more of a crispy/crumbly topping. My husband agrees.

No Bake Cookies! My husband demanded out nowhere. After a quick call to his mom for the recipe and a drive to the grocery store, we made delicious Peanut Butter Oatmeal No Bake Cookies

Note: I've found it a good idea to have the secondary ingredients (for after it boils) measured out and ready to add asap because of the tendency for the mixture to cool so fast.
4 Tablespoons cocoa
2 cups sugar
1/2 cup milk
1/2 cup butter/margarine
Put these ingredients in a pan and cook over medium heat stirring them and allowing them to mix together. When it starts to boil, allow to boil fast for 2 minutes.
Remove from heat (I usually put the pan on a potholder) and add (stir in)
1/2 cup peanut butter
1 teaspoon vanilla
3 1/2 cups of oatmeal
After stirring in above ingredients drop by spoonfuls onto waxed paper. Allow to cool the eat and enjoy.
Note: if you aren't quick about it, sometimes the mixture will get really dry and then you just kinda have crumbs….

My conclusion, these were quick and delicious and my husband loves them!
